Getting to the Gooey Center of Stroopies

If you haven’t heard of Stroopies before now, you’ll definitely want to search high and low until you find them and try one for yourself. “Stroopie†is a nickname for the Dutch cookie known as a Stroopwafel that is very common in Holland and the Netherlands. It consists of a dollop of homemade caramel sandwiched between two cinnamon cookies, cut to the exact size of the top of a coffee mug. They’re intended to sit atop your coffee cup to soften from the heat of your coffee. The rest is Ooey-gooey goodness in your mouth.


Stroopies came to Lancaster about 4 years ago. The people who make it all happen are Jonathan and Jennie Groff, who practically live in our backyard.
