Special guest this week on Bikini Lifestyles with top turkey tips is Executive Chef Sydney Hunter of Cafe Pinot, a Patina Restaurant Group restaurant in downtown LA. Chef Sydney answers all your turkey cooking questions including tips on the right turkey to buy for the best outcome.

To brine or not to brine? Chef Sydney says definitely brine. Need a good brining recipe? Chef Sydney shares his:

Chef Sydney Hunter’s Turkey Brine
For 12 to 18 pound turkey

1 ¬Ĺ gallons water
1 cup honey
1/2 cup chopped garlic cloves
4 fresh rosemary sprigs
1/2 cup fresh thyme sprigs (about 15 sprigs)
3/4 cup fresh Italian flat leaf parsley sprigs
16 bay leaves
3 tablespoons cracked black pepper
2 cups kosher salt

1. Place water, honey, garlic, rosemary, thyme, parsley, bay leaf, black pepper, and kosher salt into a large stock pot and bring to a boil and then turn it off. Let it cool off until it is lukewarm and cool off until in the refrigerator until cold.
2. Place turkey into a large container and pour brine over turkey with all of the ingredients.
3. Store in refrigerator for 12 hours and take turkey out of brine.
4. Keep turkey refrigerated until ready to cook.
